Thanksgiving is a great holiday for me because I get to shop for and eat all the foods I love. I don't usually make it on Thanksgiving because I end up at someone else's house but I do make Turkey and Stuffing, Sweet Potatoes, Pie, and of course cranberry jelly. Yes I like that stuff right out of the Ocean Spray can.
There will probably be Brown and Serve rolls, butter, jam, and a jello with fruit in it: either red with pears or fruit cocktail or green with pineapple. None of those really constitutes cooking but you gotta have it. I typically stuff the turkey a bit but most of what I make is dressing because it is cooked outside the bird. Yes Virginia it has to be stuffed inside to be "stuffing".
It is a time when stocking up on turkey (if you have room) is key to future great meals at a savings. Turkey can be used for more than just the main event. Sure that's great but if you get at the carcass.cut slices, leaving little pieces behind, pack those slices (gently for lunch tomorrow or later tonight) in the fridge, gather those little pieces and pack in a freezer bag for a week from now, and get that bird in the stockpot you can make soup or stock.
I pack the stock in an ice cube tray, freeze, pop out and save for a day when you need some flavor enhancement in a chicken, turkey or even a pork dish. A stock cube or two can do wonders to add a richness to your cooking.
Do you try to save at Thanksgiving? Do you think ahead to what you will do with leftovers? Do you have a favorite bread, lettuce, tomatoes, mayo or Miracle Whip on hand? Make sure to add them to your grocery list. I always add avocado and bacon to my sandwiches too, of course we think those are staples at my house. Look up some recipes in advance so you know what to do with those leftovers: Turkey Tetrazini, Turkey Rice Soup http://www.redgoldtomatoes.com/recipes/detail/turkey-rice-soup, or look here for more great ideas http://allrecipes.com/recipes/everyday-cooking/everyday-leftovers/turkey/
